Recipe of the Month: Tomato and Cucumber Salad

What You'll Need:

  • 1/4 cup light mayonnaise
  • 1/4 cup reduced-fat sour cream
  • 1/4 cup seasoned rice-wine vinegar
  • 1 tablespoon fresh lime juice
  • 2 pints cherry or grape tomatoes, halved
  • 1 small seedless cucumber, thinly sliced
  • 3 tablespoons finely chopped scallions
  • 2 tablespoons fresh dill

Step by Step:

Combine the first 4 ingredients and whisk until blended.

Add remaining ingredients and stir gently to mix and coat.

Yield: 7 cups
